One of the most important tips for sewing with linen is to be accurate and to keep the fabric from shifting under your hands. I've had one of these Clover Hot Hemmers in my sewing kit for ages. When I need to be precise in my pressing and turning, I keep this tool by the iron.
You can use very hot temperature on these hemmers to press hems, poke the corners into anything that needs a presice point and use the curved portion to press pockets and curved collars. The material is heat resistant and allows the steam of the iron to pass through and it's also grippy so it holds your fabric in place.
